So I finally did it. I made bacon bourbon over the weekend to share with some friends, and I thought I’d give you the step-by-step account. First things first, introductions. Bacon, meet Bourbon. Bourbon, Bacon.
Okay, pleasantries out of the way, I fried up a few slices. The recipes I’ve read have called for anywhere from 1 to 4 ounces of bacon grease. I went with about 2, although I didn’t actually measure so it could have been as much as 3. I used fresh, hot grease to warm up some grease i’d been saving in the fridge, and poured them into a clean pitcher.

And now the Bacon and Bourbon are getting to know each other on a more intimate level.

Mmm…congealing already.

While the infusion process takes place, I share the bacon bounty with my most discriminating friend.
After 2 hours at room temperature, I placed the pitcher in the freezer for more than an hour so all the grease could become very firm. I used a slotted spoon to fish out the larger chunks of grease, then I went with a double straining method: first, with a wire mesh strainer, then with cheese cloth and a funnel to make sure no little bacony bits made it back into the bottle.
And voila! Ready for tasting. In tomorrow’s exciting installment: Did Anybody Like It?!

More bacon cake, this time for humans! This is a simple cornbread cake with crumbled bacon and maple/cream cheese frosting between the layers and, of course, on top. Yum!
Have you ever done a bacon search of Flickr? Crazy stuff. I mean, what the heck is this thing?

I have to be honest with you, readers. My roommate, Marianne, can be a little stingy with the treats. Sometimes I go to the office with her to help out, and for all my efforts I get, like, two treats the whole day. It’s pretty unfair, considering all the support I give her during the day. Fortunately, we have a co-worker named Christine (not the Kevin Bacon-hating Christine, that’s a whole other story.)
Christine seems to really appreciate the work I do around here, and regularly invites me to help out in her office. She’s also plenty generous with the goodies, like these delicious, organic, all-natural bacon and cheddar biscuits from A Dog’s Life. They’re wonderful, like a savory, crunchy cookie. And they’re organic so I can feel good about eating them, even on days when I earn…what, eight biscuits? Plus they’re small, so eight’s really like two. Thank you, Christine, for understanding a dog’s rights and needs. You’re the best.
One really cool thing about A Dog’s Life is that you can submit a photo of your dog, and it could possibly end up on one of their packages! The bag Christine bought has a local dog, Bella, and I think I may be the next best candidate. What do you think of this shot? Don’t I look buff? Do you think I have a chance?

Could there be two more heavenly words than bacon and pizza? And I don’t mean that Canadian variety so popular with the pineapples. I’m talking fat-marbled, skillet-fried, greasy, delicious bacon. According to Serious Eats’ Slice report, Famous Original Ray’s in NYC has made my pizza dreams come true.
Don’t axe me about the broccoli? spinach? something green and white pizza next to it. I couldn’t be less interested. Let’s hear more about a giant thin-crust pizza with nothing but cheese and bacon to keep it warm in my belly. This image is going to cause my salivary glands to tighten every time I think of it.
There’s a pretty great New York-style pizza place in my neighborhood. I might just have to take this photo to them and see if they bite. If they do, there will be a lot more pizza nights at my house.

Internet, this product has just BLOWN. MY. MIND. I thought it was a joke at first, but no. Indeed this product is real. It’s bacon in a can and it’s found exclusively at MRE Depot. The camouflage can and the description “MRE” bring to mind images of men out camping, perhaps hunting deer. When you’re backpacking into the brush, you don’t want a lot of perishables in your pack. And when you’re hunting wild game, you don’t want the smell of grilling bacon to tip them off to your presence. So of course you need canned bacon. It gives you the protein you need to stay focused on killing poor Bambi’s daddy. (Says the porkaholic.)
The only other reason I can imagine buying canned bacon is for emergency food storage, I guess? Because the Apocalypse just wouldn’t be any fun without it. Nothing but condensed soup and fruit cocktail. (Am I the only person who has an emergency food storage? Apparently full of food I dread?) Some things just do not say “canned” to me…things like sausages and tamales. I can now add bacon to that list. Even though I can’t stop staring at these photos. Just look how shiny the bacon grease makes the waxed paper at the bottom of the can!
This website gives truly step-by-step images of how the bacon looks upon coming out of the can. They are so good, I wanted to put every single picture in this post. Instead I will urge you, nay, beg you to go to the site and check it out. I kid you not, this product has made my Monday morning. And may I just add, God bless America!
